Ke\u00e7i s\u00fct\u00fcnden yap\u0131l\u0131r ve d\u0131\u015f y\u00fczeyinde beyaz k\u00fcf bulunur. \u00dczerinde sadece Crottin yazan peynirler ayn\u0131 teknik ve bakteriler kullan\u0131larak yap\u0131lm\u0131\u015f demektir ama Crottin de Chavignol yaz\u0131yorsa otantik olarak Chavignol k\u00f6y\u00fcnden geliyordur. Crottin de Chavignol ismi tescillidir ve sadece Chavignol k\u00f6y\u00fcnde markalanm\u0131\u015f \u00fcretim tekniklerine g\u00f6re yap\u0131lan peynire verilir. Peynir hakk\u0131ndaki Wikipedia sayfas\u0131 <a href=\"http:\/\/en.wikipedia.org\/wiki\/Crottin_de_Chavignol\">http:\/\/en.wikipedia.org\/wiki\/Crottin_de_Chavignol<\/a>. <\/p>\n<p>Bu peynir \u00fczerindeki k\u00fcflerin geli\u015fmesi i\u00e7in 4 hafta bekletilmesi gerekiyor fakat 2 haftada beyaz k\u00fcf beliriyor. Tuz bu k\u00fcflerin ba\u015f yard\u0131mc\u0131s\u0131. Tuz olmadan geli\u015fmeleri imkans\u0131z. Alet edevat olarak ta biraz emek isteyen bir peynir. Bu peyniri ben d\u00fckkanlarda bulamad\u0131m, e\u011fer ba\u015far\u0131l\u0131 bir \u00fcretim yapabilirsem \u00e7ok g\u00fczel olacak. <\/p>\n<p><b>Crottin Bakterileri<\/b> <\/p>\n<p>Geleneksel tarifte -ki bunu direk Chavignol kasabas\u0131ndaki bir ustadan \u00f6\u011frendik- starter bakterisi olarak MA4001 yada RM32 olarak ge\u00e7en <i><b>Lactococcus lactis<\/b><\/i> familyas\u0131ndan <b><i>lactis<\/i>, <\/b><i><b>cremoris<\/b> <\/i>ve <i><b>diacetylactis<\/b><\/i> ile <i><b>Streptococcus thermophilus<\/b><\/i> bakterileri var. Bu bakteriler ilk bak\u0131\u015fta mezofilik gibi g\u00f6r\u00fcnse de sonuncu <i>Streptococcus thermophilus<\/i> bir termofilik bakterisi. Bunlar\u0131n oranlar\u0131n\u0131 \u00f6\u011frenmem epey zaman ald\u0131 fakat en sonunda \u00f6\u011frendim. Hepsi e\u015fit miktarda ekleniyor. Elinizdeki mezofilik k\u00fclt\u00fcre yo\u011furt ilave ederek ayn\u0131 etki sa\u011flanabilir. <\/p>\n<p>Gelelim bu peynirdeki aroma k\u00fclt\u00fcrlerine. Crottin peynirinin d\u0131\u015f kabu\u011fundaki beyaz k\u00fcf <b><i>Penicillium Candidum<\/i><\/b>, <b><i>Brevi Linens<\/i><\/b> ve <b><i>Geotrichium Candidum<\/i><\/b> bakterilerinden ve aromadaki o farkl\u0131 tad ise <i><b>Arthrobacter Nicotianae<\/b><\/i> ve <b><i>Debaryomyces Hansenii<\/i><\/b> bakterilerinden geliyor. <i>Penicillium Candidum<\/i> beyaz k\u00fcf olarak sat\u0131l\u0131yor (PC12 veya PC22 olarak), di\u011fer 4 bakteri ise <i>PLA<\/i> ad\u0131 alt\u0131nda mevcut. Bunun \u00e7\u00f6z\u00fcm\u00fc ise peynir y\u00fczeyindeki pH&#8217;in y\u00fckseltilmesidir. Bu i\u015f i\u00e7inde <b><i>Geotrichium Candidum<\/i><\/b> imdad\u0131m\u0131za yeti\u015fiyor. G. Candidum peynir y\u00fczeyindeki proteinleri h\u0131zl\u0131ca t\u00fcketerek istenmeyen organizmalara besin b\u0131rakmaz ve P. Candidum rahat\u00e7a ve yava\u015f\u00e7a geli\u015febilir. Bol bol tuzlamay\u0131 da ihmal etmeyin.<br \/>Ben bu k\u00fclt\u00fcrleri \u00f6l\u00e7erken epey zorland\u0131m. PLA ve PC paketlerinden \u00e7\u0131kan 5 yada 6 gram toz 1000 litre s\u00fct i\u00e7in. 8 litre s\u00fct i\u00e7in nas\u0131l \u00f6l\u00e7e\u011fiz? Ben b\u0131\u00e7a\u011f\u0131n sivri ucu ile \u00e7ok k\u00fc\u00e7\u00fck bir miktar ald\u0131m.<\/p>\n<div>Yerel peynirlerde starter kullan\u0131lmad\u0131\u011f\u0131n\u0131 ve ortam bakterilerinin havadan veya kullan\u0131lan aletlerden yada hayvan\u0131n yedi\u011fi otlardan s\u00fcte ge\u00e7ti\u011fini daha \u00f6nce belirtmi\u015ftim. Tabii bu durumda ticari olarak \u00fcretilen peynirlerin her zaman ayn\u0131 tad ve aromada tutturulmas\u0131 sorun olabilir.
